Moo Shu Pork Tacos

Trim and thinly slice scallions, keeping greens and whites separate. Thinly slice radishes. Finely chop mushrooms.

Heat olive oil in large pan over medium-high heat. Add scallion whites, mushrooms, and cabbage. Season with salt and pepper. Toss until softened, 3 to 4 minutes. Add pork to pan and cook about 4 minutes. Stir in soy sauce and remove from heat.

Make sauce by combining hoisin sauce, mayonnaise, and water. Heat tortillas for 30 seconds in microwave and divide pan mixture between tortillas. Top with radishes, sauce, and scallion greens.
